General Manager, Heather Vaillette and Executive Chef Denis Gagne included as guest speakers in a webinar, presented by the EPA. In the webinar, titled "Behavior Change, Techniques to Reduce Food Waste & Avoid Contamination, Chef Gagne and Heather spoke to the group about the importance of involving team members in waste reduction efforts, provided ideas for others to use and spoke about challenges and best practices at Clark University. About Anthony, Sustainability Ambassador
Anthony Akuoko Oduro, MBA/ Community Development and Planning is student at Clark University. Anthony is from Ghana and migrated to the United States in 2009. He has a BS in General Agriculture from the University of Cape Coast in Ghana and MS in Management of Agro-Ecological Knowledge and Social Change from Wageningen University in the Netherlands. He has also worked with World Vision International Ghana, and Conflict Mediation Services of Downsview in Toronto, Canada, where he received certification as a Transformative Conflict Mediator.
Anthony's interest in sustainability comes from his educational background and also from his own experience in working with an International Non Profit Organization. He believes that sustainability is a wholistic idea. It entails the notion of keeping business alive and keeping society in equilibrium. It is about doing things in a realistic way. He believes that sustainability also means taking the small steps that leads to the achievement of the overall bigger goal of maintaining our society.
Anthony's way of effecting shift towards sustainability efforts is in the contribution of ideas and facilitating the collections of ideas of stakeholders on issues of environment and socio-economic equilibrium.
His role in helping Clark Dining services and Clark University to achieving environmental and socio-economic sustainability is to first to facilitate the dialogue between stakeholders who have interest on environmental and socio-economic sustainability; helping to implement achievable and realistic sustainability plans and assisting to monitor progress of our efforts. Anthony's vision is to assist in the first steps of the journey of thousands miles being embarked on by Clark dining Services and Clark University.

Clark Dining Services is pleased to announce our renewed partnership with Freshpoint of Connecticut. Freshpoint is well known for it's commitment to sustainability, in particular sourcing from local and regional farmers. Keep posted for dates to join our Dining Services Green Team on scheduled farm tours of the Connecticut River Valley. Participants will get a chance to see where our local produce comes from and the farmers who grow it!
